Cold Oatmeal Porridge

Oatmeal is meant to be healthy, but how can it be with instant oatmeal packets that have far too many chemicals and sugars in them?

Did you know you can make oatmeal in the refrigerator? If convenience is your thing, try this breakfast idea. Put 1/3 of a cup of rolled oats (neither instant, nor steel cut) into a bowl. Add 1 cup of soy or almond milk, along with some ground flaxseed or chia seed, sliced almonds, and a touch of honey for sweetness.

Sweet Potato Pancakes

Everyone loves pancakes, but the refined flour and spoonfuls of syrup easily derail a day of healthy eating.

To make pancakes healthy, switch to whole wheat flour instead of refined. What many people don’t know is that eggs are not necessary in pancake batter. For moisture, mash in one large baked sweet potato and add some soy or almond milk. The sweet potato will sweeten the pancakes naturally without added sugar.
